Salted Caramel Chocolate Chip Cheesecakes

For Crust
18 Oreos 
1/4 cup unsalted butter, melted

For Filling
1 (16oz) package cream cheese, softened
3/4 cup granulated sugar
1/4 cup yogurt
2 large egs
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips

  1. Preheat oven to 350 degrees. Line two 12-count cupcake pans with 18 liners
  2. For the crust: In blender, pulse Oreos into crumbs. Stir crumbs and melted butter together in a medium sized bowl. Press 1 heaping tablespoon of mixture into the bottom of each liner(should be enough for 16-18 cups). Bake in batches for 5 minutes and allow to slightly cool as you prepare the filling
  3. For the filling: Beat cream cheese in large bowl on medium speed until completely smooth. Add sugar and yogurt. Beat on medium speed until combined. Add the eggs individually, beating on low speed after each addition. Scrape down the sides of the bowl as needed. Beat in the vanilla extract and mini chocolate chips
  4. Spoon batter into the crusts until nearly full. Bake each pan for 20-23 minutes. The centers may not have settled yet(that’s expected), and they may have risen but they will deflate as the cheesecakes cool. Remove from the oven and allow to cool completely at room temperature, at least 1 hour. Transfer to the refrigerator and allow to chill for at least two hours
  5. Right before serving, top each cheesecake with salted caramel and additional chocolate chips, if desired. Cover cheesecakes tightly and store in the refrigerator for up to 5 days. Store cheesecakes (without caramel) in the freezer for up to 2 months. Thaw in the refrigerator overnight

Pumpkin Chocolate Chip Muffins

4 eggs
2 cups sugar
1 (16oz) can pumpkin
1 teaspoon vanilla extract
1 cup vegetable oil
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
12oz semi-sweet chocolate chips

  1. In large mixing bowl beat eggs, sugar, pumpkin, vanilla and oil until smooth.
  2. Mix dry ingredients together and mix into pumpkin mixture. Fold in chocolate chips.
  3. Fill greased or paper-lined muffin cups 3/4 full.
  4. Bake at 400 F for 16-20 minutes.
  5. Let cool 10-15 minutes before removing from tin.

Best Cobbler You’ve Ever Had

1 box yellow cake mix
1/3 cup butter, softened
30 ounces canned peaches, drained
8oz cream cheese
1/3 cup sugar
1 teaspoon vanilla

  1. Preheat oven to 350 degrees. In a large bowl, combine cake mix, butter, and 1 egg. Mix ingredients until crumbly. Separate ½ cup of crumble for topping.
  2. Spray a 9×13 glass dish with cooking spray. Press remaining crumble into base of dish.
  3. Bake for 10 minutes. While crust bakes, slice peaches into small, 1 inch pieces.
  4. Beat together cream cheese, sugar, 1 egg, and vanilla until creamy. Layer peaches on top of baked crust. Spread cream cheese mixture on top of peaches.
  5. Top with reserved crumbs and bake for 30 minutes. Allow to cool for 30 additional minutes and serve with vanilla ice cream.
